Iron Chef

EEEEEEEEEEEKK!

Brett! What were you thinking? Seriously?

OK everyone calm down. Just breathe. It's not really that big of a deal. ...but it sort of is.

Brett entered me in the Base Iron Chef: Fit to Fight competition... ok, I bashfully consented. (Me: Oh Brett, I'm not THAT good... I mean, I'm pretty good.. but I don't know! Brett: Yah whatever it's up to you. Me: We'll if you insist! )
They only choose 6 so I figure I wouldn't get picked. Wrong! Ironically 6 is my lucky number so I should have known.



So I know I won't win. Or place. But if I can get 2 compliments, I'll be stoked. Actually if  I don't make anyone barf I'll be happy. That's a good goal right?

But i need your help. I know this competition will be based on a healthy recipe... or at least "Fit to Fight" conveys that idea to me. I would be pretty mad if I made hummus and someone who made cheesecake won.

I think I'm ready for this. Last night I spiced up my Pasta Roni by adding sauted red onions, spinach and cranberries. Brett didn't finish it.... why did he think I would be good for this? Oh well, at least I liked it.


I REALLY WOULD LOVE YOUR HELP HERE NOW. I have 2 weeks to play around with different flavors. If you have a unique -healthy- flavor combination please post it. Especially in seafood or asian food... which i don't do.

Nice Rache! I am so glad I'm not you. I know noone in their right mind would put me up for an iron chef contest....although I would put Mike up for one. :) I can't help you out, but I'll be thinking good thoughts. How about that? I bet Missy would have good ideas. You should ask her...that's all I got. Miss you guys!

My favorite Asian dessert is mango and sticky rice, (Thai). It's really good and really easy to make. You do have to have a few special cooking tools, like this big metal pot and this basket thing made out of rice, so that you can properly make the sticky rice. But if I were you I would get one of those anyway because sticky rice pretty much kicks any other rices butt.

For an appetizer I would do crab and cream cheese, (low fat?) wontons with a plum sauce, (so good).

None of these are super healthy, but I bet that the judges won't even care because they are so darn tasty.

You could always do fresh spring rolls, which aren't fried, but why would you want to do that?

Or another healthy appetizer could be an Asian soup. You could go all that way and make your own broth. Once you've had homemade broth store bought tastes like water someone scraped off the sidewalk outside.

Oh, I have a GREAT knock off recipe for the avocado egg rolls from the Cheesecake Factory. Not really Asian, but super good. Plus, you could argue that the fat in them is the healthy kind.

My wife doesn't consider herself a cook, she says she's just a copy cat. Considering the amount of cooking know how she had when we were married though, it's amazing how good she is. Here's a Maple Salmon recipe that's way easy and tasty in my humble opinion.

1/4 C maple syrup
2 T soy sauce
1 clove garlic
1/4 t garlic salt
1/8 t ground black pepper (we just use regular pepper, of course)
1 lb. salmon

mix the maple syrup, soy sauce, garlic, garlic salt, and pepper

Put the salmon in a shallow glass baking dish, coat with the above mixture, cover and marinate in the refigerator for at least 30 min., turning once.

Cook uncovered for 20 minutes and 400 degrees.

You can serve with green beans or rice. Ange makes up an extra batch of marinade to put on the rice.

I have a dessert pizza recipe that I'm trying to find. I'll post it when I find it.
